I had never even heard of this bean variety, it's mostly grown and eaten in Italy apparently. Their flavor is similar to big white butter beans (what we call lima beans in the South)--super, super tender and creamy, but their skins didn't split even though I left them in the instant pot for 2 hours after the cook time was done. These would be outstanding with ham hocks and butter and maybe some cream after Lent, but are also pretty good on their own. Ngl, I put some avocado oil in there. Wouldn't want to get all ... LEGALISTIC ... about fasting. Anyone looking for a meatless main dish give 'em a try.
