@shortstories Im no expert on growing plants in harsh winter conditions but couldn’t you build a giant greenhouse?
That would be a question for engineers construction workers and architects
That would also not help the plants that are more cold resistant reproduce their cold resistant genes through artifical selection

You could try planting plants in colder and colder environments and see which ones survive the ones that survive could be reprduced this would take multiple generations but could produce cold growing food plants to a certain degree
