Angostura Bitters was created over 2 centuries ago. It's the original. Devised in Trinidad.

Orange Bitters is great at reinforcing the orange flavor of drinks with Orange Liqueur in it (Grand Mariner, Orange Curacao, Triple Sec). Great for a dash topper and a rimmer. Orange Liqueur is the most popular liqueur in cocktail recipes. So this is probably the 2nd one you want to get.

Fee Brothers Black Walnut and Aztec Chocolate are great for accenting coffee liqueur drinks, Irish Creme drinks and that kind of thing. Also if your bourbon has chocolate notes, this will reinforce them.

Fee Brothers Rhubarb gives a nice sweet and sour Rhubarb taste, to jazz up a rum or whiskey cocktail. Like a Manhattan! It also goes great with fruit juices. This Rhubarb bitters also goes good where Cherry flavors are involved (even subtley)...it's not cherry but tart cherry adjacent which adds an interesting dimension or nuance, contrast, complexity.

Bittermens Elemakule Tiki Bitters brings the Allspice Dram (Baking Spices) to the party. These are nice additions to many rum tiki cocktails especially. Like the Tradewinds that I made 2 nights ago.
