Most Americans dont appreciate the stronger oyster flavor in the premium oyster sauces.

You dont have to add Red Food Coloring (but my brother likes the red color and this is what I had on hand). Traditionally this red color comes from fermented red bean curds/paste...you can also use beet juice or even ketchup. But you dont really need any of that stuff...your BBQ sauce will just be brown instead of red...still taste the same.

If you dont have Shouxing wine, you can sub a Red or White Wine, or Rice Wine or White Wine Vinegar.

The sweeteners are also fungible, dont have molasses, use brown sugar. One thing to keep in mind is that you want the mop sauce to have some thickness to stick to the pork shoulder cutlets when brush basting them during cooking. So honey is almost mandatory (although you could use maltose).
