what if these modern ML, disguised as AI, expose humans as not being as sentient as we thought? what if we're not that different or complex, but only have this bio-electrical hardware that can condense multiple data centers into something as small as a pumpkin. what then, how will our own perception change? how would we see the universe?

By saying what you've just said, you have put yourself in a performative contradiction since thoughts such as those require sentience, consciousness, creativity and metaphysics.
All of those things are beyond the capabilities of ML/AI.
