1. How'd they gain access to the israelites? Most of them were half a continent away from Khazaria and the rest were scattered across the Roman Empire. Only a tiny amount of them were available for impersonation/genocide.

3. Why does the old testament and other historical sources testify to exactly the same behaviour long before any contact with the Khazars?
Either the jews are the real jews, or they're so similar it makes no difference.
Plus I doubt at this point you could distinguish between "true hebrew jews" and "khazarian" jews. Any more than you could distinguish between judeans and israelites. They've gone through thousands of years of interbreeding, some of them claim to trace their ancestry back to David but that's a bit like Saxons claiming to trace their ancestry back to Wotan.
