If you eat the same number of Calories in meat but the meat has a lower percent of Calories from fat then it will have a higher percent of Calories from protein and more grams of protein in total presuming no other Calorie sources than fat and protein are present in the meat. Sometimes other ingredients with other types of Calories are added for flavor.
Some reduced fat meat tastes good and some tastes horrible. All fat free meat is reduced fat but not all reduced fat meat is fat free.
