Christians always make a big thing about shifting it to "their thing" instead of it just being white countries.

perhaps this is a blind spot for me but i don't recall reading about jews getting out of hand and being kicked out of any caliphates, likely because in caliphates they weren't able to practice usury or hold any positions of power or influence

Jews and Christians have occupied very powerful positions in past Caliphates. E.g. St. John of Damascus served the Umayyad caliphate in high office in Damascus.
Loans are permitted with a contract premium provided they are fixed-term and not to exceed a specified amount.
