They made the edible shell out of something that tasted very good
There was a small store I saw years ago which would sell Chareleston Chew bars and let people buy them frozen if they wanted

Ice cream is usually lower in protein & higher in animal fat than some healthier dairy products

It is possible to change the texture or other properties of food which effect the taste without changing the list of ingredients
Take for example something with one ingredient peanuts removed from the shell
You could have them whole or you could crush them or powder them
Either way the chemical formula might be the same but it would have different physical properties if mixed into food
Depending on the other ingredients & the goals one or the other might be more desirable

So if you eat eggs that are not fertilized you are not preventing a bird from living to grow up and hatch out of the shell
