@Tfmonkey There are evil Fey, but unlike mortals, they don't have souls, they are ancient and powerful, and intelligent. Fiends/Demons like clear cut deals and that is like the opposite of Fey

The devil has cow traits because a lot of pagan gods are based on cows because cows are such beneficial creatures to humans. Everything about demons is just decontextualized pagan religion.
