Laziness and lack of time.
The average american can not be bothered to cook three healthy meals a day. Nor have they the skills to make them taste good enough to not resort to cheating on fast food even when they try.

I wonder how well the monumental experiment that is meal replacements is working. If macros and micros are all that matter then consumers of these supplement style meals should be very healthy.
